Recipe of the Month: Banana Chocolate Chip Mini-Muffins (V)

 makes 36 mini-muffins


Ingredients:


  • 3 very/overly medium ripe bananas (the riper, the sweeter)
  • 1/4 cup/4oz/1 small travel cup unsweetened applesauce
  • 1/4 cup oil (a neutral like grapeseed, canola, etc)
  • 1/4 cup white sugar
  • 1/4 cup dark brown sugar
  • 2 tbsp molasses
  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1.5 tbsp pumpkin pie seasoning (you could use any other warm spice, like cardamom, garam masala, cinnamon, nutmeg, etc.)
  • 5oz (about half a bag) mini-chocolate chips

Directions:

  • Preheat the oven to 350 degrees.
  • Mix together wet ingredients together in a bowl on low speed: bananas, applesauce, oil, sugars, and molasses.
  • In another bowl, mix dry ingredients together: flour, salt, baking soda, and seasoning.
  • Slowly add dry into wet, mixing well to incorporate.  Add in the chocolate chips, scraping the sides if needed.
  • Grease mini-muffin tins with spray oil (as needed/required) and spoon 1 tablespoon of batter into each.
  • Bake for approximately 15 minutes or until golden brown and a toothpick is cleanly inserted.
